This is definitely one of my favorite pastas to order when we go out to eat, so I had to learn to make it at home too. It is actually pretty easy to make and super delicious! This one will definitely have you going back for seconds.
Ingredients:
3 Tbs. of olive oil
3/4 shallot, finely chopped
4 Tbs. of tomato paste
4 Tbs. of vodka
1 Cup frozen peas
1 Cup heavy cream
2 Tbs. butter
2 Tbs. fresh basil, chopped
Salt, pepper, and crushed red pepper to taste
1 Box of rigatoni pasta
Parmesan cheese to garnish
Instructions:
In a medium sauce pan, heat olive to a medium heat and add the chopped shallots. Cook for about 10 minutes, until your shallots look transparent.
Add the tomato paste and some salt and pepper. Stir occasionally, cook until your paste is a nice deep red and your mixture is starting to slightly caramelize (about another 10-12 minutes).
While that is cooking, start boiling the water for your pasta. Add pasta, note: just before it's cooked and you're about to strain, hold just a little more than 1 Cup of the pasta water and set aside.
Once your tomato paste mixture is cooked, add more salt and pepper. Then add crushed red pepper flakes, peas, and the vodka. Stir until everything is evenly mixed, lower heat slightly.
After your vodka has cooked off, return to medium heat. Add heavy cream, butter, pasta water, and basil - then thoroughly stir until all ingredients are combined. Reduce heat to medium-low.
Cook for an additional 15 minutes, stirring occasionally.
Plate and serve as pictured above, be sure to add cheese and basil to garnish!
