This is one of the first crockpot recipes I ever tried, it's basically a dump and cook recipe. Plus, you can always add or substitute for the veggies if your family has any specific preferences.
Ingredients:
3 chicken breasts (fresh or thawed)
1 can of black beans, drained and rinsed
1 can of corn, drained
I can of Rotel
1 ranch seasoning packet
1 taco seasoning packet
1,16 oz. block of cream cheese
Instructions:
Add your chicken breasts, black beans (drained and rinsed), corn (drained), 1 can of Rotel to your crockpot, and then stir.
Next your will add your ranch and taco seasoning packets, then stir again and cover.
Cook on low for 4-6 hours on low, your chicken should be falling apart.
Shred your chicken and stir until everything in mixed thoroughly.
Add cream cheese and cook for an additional 40-60 minutes.
Stir and serve with your favorite rice or with tortillas.
You can always serve this one topped with extra cheese, veggies, or tortilla strips. If you are going to freeze and enjoy later, wait to add your cream cheese until that day. Perfect for a fall or winter day!
