Crockpot Broccoli Cheddar Soup

I'm not going to lie, this is the perfect dupe for Panera's recipe! We even served in one of their sourdough bread bowls.





Ingredients:

  • 12 oz. of fresh broccoli, chopped

  • 2 cups of matchstick carrots, chopped

  • 1 medium-sized yellow onion, very finely chopped

  • 2 cups of shredded cheddar cheese

  • 2 cups of chicken broth

  • 2 cups of half and half

  • 1/4 cup of all-purpose flour

  • 1/2 tspn. of salt

  • 1/4 tspn. of paprika

  • 1/4 tspn. of garlic powder

  • 1/2 tspn. of regular mustard

  • 1/4 tspn. of black pepper


Instructions:

  1. Add onion, carrots, broccoli, salt, paprika, garlic powder, mustard, and black pepper to your crockpot.

  2. Whisk the flour and chicken broth until there are no more lumps, then slowly add to your crockpot and stir.

  3. Cook covered, on low for 8 hours.

  4. About 45 minutes before you are ready to serve, add the half and half as well as your cheese. Stir thoroughly.

  5. As cheese is melting add a little more chicken broth until melted cheese in no longer stringy.

  6. Then you are ready to serve, this one goes great in a bread bowl!
